The problem
Mexican food in Europe is everywhere and almost nowhere. It arrives pre-diluted — Tex-Mex shortcuts, fusion, the margarita-and-nachos cliché — so "Mexican" in a European city tends to name a genre rather than a country. The brief was not to add one more stand to the Hispanidad calendar. It was to make authentic legible at the scale of a city, to tens of thousands of people who believe they already know the cuisine.
The decision
Organise the entire festival around two ingredients: agave and maize. Not as a theme — as a filter. Agave to drink, maize to eat. Everything that didn't ladder up to that was cut: no fusion, no generic frozen-margarita bar, no crowd-pleasing shortcuts. The drinks were built on five agave spirits with denomination of origin — mezcal, tequila, raicilla, bacanora, sotol — rather than one catch-all cocktail list. The food was ten Sello Copil restaurants, standing in a single space together for the first time. Positioning is subtraction, and the name over the gate — Agave y Maíz — is the subtraction made into a promise.
What got built
A four-day experience on the Puente del Rey esplanade, free and open to the public — because the fastest way to kill a claim of authenticity is to put it behind a velvet rope. Ten casetas of Sello Copil cooking, bars of denomination-of-origin agave spirits, 36 hours of live music across 22 groups and DJs, and a show-cooking competition judged by a real jury: the city of Zapopan, the Academia Madrileña de Gastronomía, the Fundación Casa de México, Sello Copil, and readers of El País. The structure did the arguing. Nobody had to be told the food was serious; they queued for it.
The broader point
What the numbers said
More than 50,000 people across four days. More than 80,000 tacos served. Awards that became their own headlines — Puntarena for best taco, Valletako for best tostada, Los Carnales for best cocktail and the public's favourite. Coverage across Marca, El País, El Confidencial, La Razón, Time Out and more. And the clearest signal that the positioning held: a 2027 edition, already announced.
The decision to stand for less — two ingredients, done properly — is exactly what let the festival mean more. That is not a food-festival lesson. It's the same move behind every brand that is legible in a crowded market, built at a scale you could walk around in four days.
